Slice up the squash & roast in the oven until cooked - about 20mins should do it |
While the squash is cooking fry the mushrooms & then add the spinach to wilt down |
Layer up the lasagne sheets, roasted squash, mushroom soup & cooked mushroom & spinach in an oven dish. You should be able to get at least 3 layers out of the ingredients |
Top with grated cheese & pop in the over (200 degrees c) until brown & bubbling - about half an hour should do it |
Most important bit - have a glass of wine to reward yourself for all that work while the lasagne is cooking! |
